Dansk Mjød is a family-owned meadery in Billund, in central Jutland, founded in 1994 and run today by Michael Brogaard. It brews its meads from honey and natural ingredients on brewing equipment it developed itself, combining traditional methods with a modern approach to quality, and its range now runs to more than a dozen meads, from the classic Gl. Dansk Mjød to barrel-aged and Christmas bottlings. Klapøjster Mjød starts like the rest of the range, as a mead brewed from honey and water, but it draws on an old Danish custom: the mead is blended with snaps, the traditional Scandinavian spirit. Adding the snaps makes Klapøjster stronger than the house's regular meads and gives it a distinctive snaps aftertaste, while keeping the classic honey sweetness of mead at its center. It is bottled in a black matte bottle with a green hexagonal label showing a Viking longship and knotwork, sealed with a wooden cork. Dansk Mjød suggests serving its meads slightly chilled in a wine glass or at room temperature as a dessert wine.
