Dansk Mjød is a family-owned meadery in Billund, in central Jutland, founded in 1994 and run today by Michael Brogaard. It brews its meads from honey and natural ingredients on brewing equipment it developed itself, combining traditional methods with a modern approach to quality, and its range now runs to more than a dozen meads, from the classic Gl. Dansk Mjød to barrel-aged and Christmas bottlings. Viking Blod, Danish for "Viking Blood," is the most famous mead in the lineup. It takes Dansk Mjød's honey mead and adds hibiscus, which gives it its deep blood-red color along with a floral, tart edge that plays against the sweetness of the honey, and it is bottled at 19% ABV. It is a metheglin, the style of mead flavored with herbs and spices, and it is often compared to a fine Madeira: sweet and floral on the palate, with a spicy, aromatic finish. The brewery suggests serving its meads slightly chilled in a wine glass as an aperitif, over ice with fruit, at room temperature as a dessert wine, or warmed without boiling and poured into a mug in winter.
