When bartender Martin Cate of Smuggler's Cove set out to recreate the vintage Trader Vic's Mai Tai after the world ran dry of aged Jamaican rum, he partnered with Denizen to build something new: a blend designed to capture that lost flavor profile. Merchant's Reserve brings together pot-still Jamaican rum sourced from four legendary distilleries — Clarendon, Hampden, New Yarmouth, and Worthy Park — with Rhum Grande Arome from Martinique, aged eight years in ex-bourbon barrels. The result pours a deep amber and opens with rich molasses, caramel, vanilla, and dried banana, backed by warm oak spice. On the palate, funky Jamaican hogo meets black pepper and ripe pineapple, with layers of toffee and brown sugar building through the middle. The finish lingers long, leather and spice trailing behind the fruit. Bottled at 43% ABV (86 proof), this rum was built for the classic tiki bar — Daiquiris, Ti' Punch, and above all, an authentic Mai Tai — though it holds its own served neat for anyone curious about old-school rum character.
