Fee Brothers Aztec Chocolate Bitters
Fee Brothers is one of the oldest producers of cocktail bitters in the United States, a family business that traces its roots to 1864 in Rochester, New York, where it still operates from Portland Avenue, now in its fifth generation of family ownership. Aztec Chocolate takes its inspiration from history: as the label puts it, the ancient Aztecs would celebrate with a bitter beverage made of cacao beans, peppers and spices. Like much of the Fee Brothers range, it is made on a base of water and glycerin rather than a high-proof spirit, flavored with natural and artificial cocoa flavor and other natural flavors, and finished with caramel color and tartaric acid. It comes in the company's signature hand-wrapped 5 oz bottle, the paper-wrapped style that has long stood out on back bars. Chocolate bitters are one of the most useful bottles to keep beside the Angostura. A couple of dashes add depth to a bourbon or rye Old Fashioned, a Manhattan, or a mezcal or añejo tequila cocktail, and they pair naturally with coffee drinks like an Espresso Martini. Outside the bar, a dash in a mug of hot chocolate or a cup of coffee works just as well.
