Dublin wine merchants Mitchell & Son began bonding whiskey in 1887, marking casks with a spot of colored paint by age, and Green Spot survived when the others vanished. Today it is single pot still whiskey from Midleton Distillery, aged seven to ten years in a mix of ex-bourbon and ex-sherry casks and bottled at 40% ABV.
Pot still whiskey, made from malted and unmalted barley, is Ireland's native style, and Green Spot is the textbook example: green apple, pear and honey on the nose, a creamy palate with vanilla, toasted oak and peppery pot still spice, and a long, clean finish with a hint of sherry sweetness.
