Noah's Mill is Willett's cask-strength small batch — 114.3 proof, a blend of Kentucky bourbons aged four to twenty years — and for decades the bottle bourbon insiders bought when they couldn't afford the Willett name on the label. It's made by Kentucky Bourbon Distillers, the Kulsveen family's Willett Distillery in Bardstown, which bottled sourced Kentucky stock under Noah's Mill, Rowan's Creek, and Johnny Drum for years before restarting its own stills in 2012; today Noah's Mill blends Willett's own distillate with older sourced barrels, still at the 114.3 proof it's carried since the original fifteen-year age statement came off. Expect a big, dark, oak-driven bourbon: a nose of caramel, toffee, dark cherry, and leather with old-wood spice, a rich, chewy palate of brown sugar, dried fruit, tobacco, and rye pepper with real tannin from the older barrels, and a long, warm, drying finish of oak and clove. Honest note: the Willett insider's bottle — the proof and the old stock make it drink like a bourbon twice the price, and it's always on the shelf when Willett Family Estate isn't; for the drinker who wants Willett's dark, oaky house style without the hunt. Neat, a few drops of water. Noah's Mill, 114.3.
