Rhum J.M Gold Rum
Rhum J.M Gold, labeled Rhum Agricole Élevé Sous Bois, is the lightly aged, high-proof workhorse from the J.M distillery at Habitation Fonds-Préville in Macouba, Martinique, at the foot of Mount Pelée, where the first distillations date to 1845. It is AOC Martinique rhum agricole from start to finish: estate cane is crushed within an hour of harvest, the fresh juice is open-fermented for 24 hours with French baker's yeast, and the wash is run through a Creole copper column still. The rhum then rests twelve months at the distillery in new toasted American oak and re-charred ex-bourbon barrels, is proofed with spring water from Mount Pelée, and is bottled at 50% ABV (100 proof) with no added sugar or coloring. Twelve months adds color and a kiss of barrel while leaving the raw cane intact, which is why J.M calls it the reposado of the rhum world. The importer's notes describe raw sugarcane softened by warm gingerbread and anise on the nose, fresh plantain and maduros with a spike of oak on the palate, and hazelnut and citrus oil on the finish.
