Xicote Blanco Tequila
Xicote Blanco is a 100% blue Weber agave tequila made at NOM 1142 in the Ciénega region of Jalisco, the lowland area east of Guadalajara around Lake Chapala. The production, as logged on Tequila Matchmaker, is a modern lowland setup built for a clean, approachable blanco: the agave is cooked under high pressure in autoclaves, crushed on a roller mill, fermented from 100% agave in stainless steel tanks, and distilled three times, a step past the usual double distillation that strips out heavier congeners and leaves a lighter, softer spirit. It is unaged and bottled straight from the still. The most common descriptors from drinkers on Tequila Matchmaker are cooked agave first, followed by pear, flowers, minerals and raw agave on the nose, with cooked agave, black pepper, citrus, honey and a touch of vanilla on the palate and a lasting peppery finish; several reviewers single it out as a mixing blanco, and that is where it earns its place. The tall blue-tinted bottle has made it a target for collectors, and it is the base of a three-bottle line with a reposado and an añejo. Pour it in a margarita, a Paloma or a Ranch Water.
