Xicote Reposado Tequila
Xicote Reposado is the rested expression of a three-bottle 100% blue Weber agave line made at NOM 1142 in the Ciénega region of Jalisco, the lowland district east of Guadalajara around Lake Chapala. The process, as recorded on Tequila Matchmaker, is a modern one: agave cooked under high pressure in autoclaves, crushed on a roller mill, fermented from 100% agave in stainless steel tanks, and triple distilled, which leaves a softer spirit than the standard double-distilled tequila before it goes to wood. A reposado by law rests in oak for at least two months and under a year, and this one picks up the barrel's influence without losing the agave. The flavors drinkers log most often on Tequila Matchmaker are cinnamon, cooked agave, vanilla, banana, caramel, butterscotch and nutmeg, with baking spice and a touch of oak, and the consensus is that the warm, spicy finish suits cocktails better than slow sipping, so this is a reposado to build a spicy margarita, a tequila Old Fashioned or a batch of palomas around. It sits between the unaged blanco and the añejo as the middle option in the range.
