Bianchi Paso Robles Cabernet Sauvignon
Bianchi Winery traces back to Glenn Bianchi, who moved his family's winemaking from the Central Valley to Paso Robles in 2000 and built the estate on Branch Road in the Geneseo District on the warmer east side of the AVA. The 2022 Cabernet Sauvignon is 100% Cabernet from two clones, 337 and 191, with 80% of the fruit from the Bianchi estate vineyard and 20% from Metz Vineyard in the Estrella District. It was fermented with a BDX yeast strain chosen to emphasize varietal character, then the entire lot was aged 22 months in new French oak at a medium-plus toast, an unusually generous regime for the price. Only 823 cases were made, and it finishes at 14.5% ABV. The winemaker's notes describe green peppercorn, graphite and dark chocolate on the nose, with jammy black currant and black cherry on a medium-to-full palate framed by cedar and leather from the barrel. Pair it with a grilled ribeye, braised short ribs or sharp aged cheddar. 750ml bottle. Vintages may vary; we ship the current release.
