Scrappy's Bitters was started in Seattle in 2008 by bartender Miles "Scrappy" Thomas, who, with only Angostura and Peychaud's on the market, rented a commissary kitchen under an Italian restaurant and made his own until neighborhood bartenders started placing orders. It was the first craft bitters company in North America, and everything is still handmade in small batches in Seattle from organic ingredients, with no artificial flavors, chemicals, or dyes. Lavender is the flagship blend and the one that made the company's name, since Scrappy's was the originator of lavender bitters; it is made through a slow infusion of Provence-grown lavender flowers with herbs and spices, and bottled at 50.8% ABV in a 5 oz (148 ml) dasher bottle. The result is bright, sweet, and well rounded, intensely floral with a slightly herbal, citrusy bouquet and a lasting finish, which Thomas calls spring in a glass. It pairs best with gin, and the house recipe, The Lusty Lady, shakes two ounces of gin, half an ounce each of lime and simple syrup, a splash of cranberry, an egg white, and two or three dashes until frothy. It also works with vodka, light rum, and spritzes.
