Scrappy's Orange Bitters
Scrappy's Bitters was started in Seattle in 2008 by bartender Miles "Scrappy" Thomas, who, with only Angostura and Peychaud's on the market, rented a commissary kitchen under an Italian restaurant and made his own until neighborhood bartenders started placing orders. It was the first craft bitters company in North America, and everything is still handmade in small batches in Seattle from organic ingredients, with no artificial flavors, chemicals, or dyes. Orange is the classically styled orange bitters in the range, made with fresh and bitter orange peels plus select herbs and spices, giving a lively orange aroma and bursts of citric juiciness up front over a light herbal backbone, with nutmeg and black pepper spice that builds gradually, bottled at 43.9% ABV in a 5 oz (148 ml) dasher bottle. Scrappy's pairs it with whiskey, vodka, and tequila, and the house recipe is a Martinez: two and three-quarter ounces of Old Tom gin, a quarter ounce each of sweet vermouth and maraschino, and three or four dashes of the bitters stirred and served up with an orange twist. It is also the right bitters for a dry Martini or a whiskey Old Fashioned.
