Scrappy's Bitters was started in Seattle in 2008 by bartender Miles "Scrappy" Thomas, who, with only Angostura and Peychaud's on the market, rented a commissary kitchen under an Italian restaurant and made his own until neighborhood bartenders started placing orders. It was the first craft bitters company in North America, and everything is still handmade in small batches in Seattle from organic ingredients, with no artificial flavors, chemicals, or dyes. Seville Orange is a seasonal release made from fresh Seville orange peel, the bitter orange used for marmalade, which is only in season for a few weeks each winter, so Scrappy's produces it once a year and it sells through when it is gone. The peel gives the bitters a marmalade-like depth and complexity that a standard orange bitters does not have, backed by warm winter spices and subtle floral notes, and it comes in the brand's 5 oz (148 ml) dasher bottle. It is built for cold-weather drinks: a Hot Toddy, a Cognac or rye Old Fashioned, a Champagne cocktail, or a Negroni where the marmalade note plays off the Campari. It also works in holiday glazes and desserts.
