Astral Blanco Tequila

Astral is the tequila Diageo bought from Davos Brands in the $610 million deal that also brought it Aviation Gin and Sombra Mezcal — then rebuilt from the distillery up. Astral was created by sommelier Richard Betts, the mind behind Sombra, as a tahona-crushed lowlands blanco; after the 2020 sale Diageo moved production to NOM 1607, Mieles Campos Azules in Amatitán — a distillery it shares with only one other brand, 818 — redesigned the bottle, and dropped the proof from 92 to 80. The Blanco is 100% blue Weber agave cooked, crushed by a stone tahona with the fibers left in the fermentation — the bagazo method that pulls more of the plant into the spirit — double-distilled in copper pots, and bottled unaged at 40% ABV, additive-free. Agave Matchmaker's tasters, blind against Volans, Insolito, and San Matías Tahona, found sweet honey, cooked agave, and citrus with a super-smooth finish; others found orange peel, cinnamon, green apple, black licorice, and a long white-pepper finish, at home in a cocktail. Distiller's reviewer: agave, fruit, nuts, herbs, and spice, then caramel, grapefruit, melon, grass, and pear with an herbal finish of oak, pepper, almond, and clove. Honest note: Drinkhacker found a petrol note and heat in an early bottle and called it a cocktail tequila rather than a sipper, and old-NOM-1137 bottles and new-NOM-1607 bottles taste different — check yours.
