7Cellars is the wine company of Hall of Fame quarterback John Elway, launched in 2015 and named for the number he wore through two Super Bowl wins with the Denver Broncos. After building the brand on approachable Paso Robles and Napa reds, Elway and his team created Completion as the pinnacle of the portfolio: a limited-production Cabernet Sauvignon from Oakville, the Napa Valley appellation that is home to To Kalon and many of the valley's most celebrated Cabernet vineyards. Oakville's deep gravelly benchlands and warm days produce Cabernet with dense black fruit, cocoa richness and the polished, fine-grained tannin that defines the AVA. Completion is aged in French oak barrels, with a meaningful share of new wood, for roughly two years before release. Expect blackberry, cassis and black cherry layered with cedar, vanilla, espresso and violet, a full, plush body and a long, structured finish that will reward a decade or more in the cellar. It is a collector's piece as much as a dinner wine, ideal for a milestone celebration with prime rib, lamb chops or a dry-aged porterhouse. 750ml bottle.
