Justin Paso Robles Cabernet Sauvignon
Justin Vineyards & Winery was founded in 1981 by Justin Baldwin on the west side of Paso Robles, decades before the region became California's Cabernet frontier, and it remains the benchmark for Bordeaux varieties in San Luis Obispo County. Winemaker Scott Shirley and his team hand-pick and berry-sort fruit from across the Paso Robles AVA, where hot days and sharp nighttime cooling from the Templeton Gap build ripe fruit with real acidity. The Cabernet Sauvignon ferments in open- and closed-top stainless steel tanks with twice-daily mixing, then ages 15 months in small American oak barrels, 25% new, finishing at 15.0% ABV. The nose shows black cherry cobbler, fresh blackberry, boysenberry, wild sage, chocolate and barrel spice; the moderately full palate delivers black plum, cassis and blackberry before roasted red bell pepper, leather and dried herbs on a moderately long finish. Wine Enthusiast rated the current release 92 points. Pour this 750ml bottle with grilled tri-tip, smoked brisket or a blue cheese burger. Vintages may vary; we ship the current release.
