Castle & Key Small Batch is the first bourbon released under the distillery's own name since it resurrected the Old Taylor Distillery — Colonel E.H. Taylor's 1887 castle in Millville, Kentucky, abandoned since 1972 and brought back to life after the company's founding in 2014. The recipe is built around white corn, which the distillery favors for its softer, more delicate sweetness: 73% white corn, 10% rye, 17% malted barley, distilled to 135 proof and entered into the barrel at an unusually low 107, a choice that pulls more sugar and less tannin from the #4 char oak. The barrels age in Warehouse B, the longest aging warehouse in the world, a relic of Taylor's original operation. Batches are blended from "pods" — groups of barrels selected for a specific sensory profile — and bottled non-chill filtered. The 2025 release marked a real step forward: aged six years instead of four, bottled at 101 proof rather than 98, and priced ten dollars lower, around $40. Breaking Bourbon found bright summer fruit, honey, and caramel grounded by graham cracker on the nose, opening into golden raisin, light citrus, and baking spice, finishing on cinnamon, toffee, orange peel, and butterscotch — calling it a really good bourbon with its own unique, lively style and an easy recommendation.
