Castle & Key Wheated Bourbon Whiskey

Castle & Key is the resurrected Old Taylor Distillery outside Frankfort, Kentucky, built in 1887 by Colonel E.H. Taylor Jr. with its limestone castle, sunken garden and springhouse, left to rot for decades and restored to production in 2018. The Small Batch Wheated Bourbon is the distillery's own make, designed under founding master distiller Marianne Eaves, who set the mash bill at 73% white corn, 10% white winter wheat and 17% malted barley, with the white corn and wheat grown for the distillery at Walnut Grove Farms. Fermentation runs six days instead of the industry's usual three, the spirit enters 53-gallon char #4 barrels at 107 proof, and the barrels rest in Warehouse B, the 534-foot brick rickhouse that Taylor built. The bourbon is aged around five years, bottled non-chill filtered at roughly 100 proof, with the exact proof and barrel count varying by batch (the 2023 first batch drew 90 barrels; batch two drew 49). Castle & Key's notes for batch two: cocoa, caramel, baked pear and buttercream on the nose, roasted cashews, toffee and dried apricot on the palate, and a honeyed-oak finish.
