Cazcanes Still Strength Blanco Tequila
Cazcanes No. 10 is the still strength blanco from a small additive-free house founded in 2015 and distilled at NOM 1614 in Amatitán, in the lowland Tequila Valley of Jalisco, under maestro tequilero Francisco 'Don Chico' Jiménez Lazcarro, a four-decade veteran of the industry. Cazcanes numbers its bottles by strength, and No. 10 is the top: 108 proof (54% ABV), bottled at the proof it came off the still with no water added and nothing else in the bottle. The agave is 100% certified organic blue Weber, harvested fully mature at peak sugar, cooked in a low-pressure autoclave over a 24-hour cycle, and crushed on a roller mill in four passes using volcanic spring water from the Navichi Springs. Fermentation is open-air in stainless steel with the distillery's proprietary yeast, distillation is double, in stainless pots with copper coils, and the finished blanco rests one to three months in stainless before bottling. It is certified organic and kosher. Cazcanes' own notes: cooked agave, tropical fruit and citrus zest with cinnamon, white pepper and anise on the nose; a clean, earthy palate of sweet agave, black pepper and bright citrus; and a long, mineral finish. Drinkhacker called it beautifully bold.
