Fair Rum 5 Year Belize

Belize Rum is made with Fair Trade Certified sugar cane grown on small plots by members of the Belize Sugar Cane Farmers Association, farmed with organic and sustainable methods and harvested by hand. The Fair Trade certification means the growers are paid a fair price for their cane, with an additional premium that goes back into their communities. The rum follows traditional Caribbean fermentation and distillation, running through a two-column still, and it is then aged for five years in American ex-bourbon barrels before being bottled at 40% ABV (80 proof). The producer describes a brown amber color with golden highlights, a nose of oak and wood followed by soft vanilla and chocolate, and a palate of butterscotch, vanilla, toffee and orange peel with a rounded mouthfeel and a quiet, dry finish. Five years in bourbon barrels gives it enough depth to sip neat or over a large cube, and the producer's own recommendation is a rum Old Fashioned, where the vanilla and orange-peel notes do most of the work. It also makes a richer Daiquiri or rum and ginger than a standard gold rum.
