Panamá-Pacific 15 Year Old Rum

Panamá-Pacific is the Haas Brothers' Panamanian rum, from a family that has worked in the California spirits business since 1851, and the name honors the 1915 Panama-Pacific International Exposition in San Francisco, which celebrated the opening of the Panama Canal. It is distilled at Ingenio San Carlos in Panama from sugarcane molasses on a historic Coffey copper column still, run at slightly lower proof than the industry standard to keep more richness in the spirit. The 15 Year is the middle of the aged range and follows the same two-stage program as its siblings, just much longer: three years in ex-bourbon casks, then twelve more in toasted, uncharred Tennessee and Canadian rye whiskey casks. Using exhausted, toasted barrels rather than freshly charred ones is deliberate, so the vanilla, caramel and butterscotch from the wood integrate with the cane and molasses instead of covering them. On the nose, fragrant pear gives way to raisin and brown sugar; the palate brings black currant jam and brûlée caramel with ginger snap and pepper, finishing on lingering butterscotch.
