The 23 Year is the oldest bottling in the Panamá-Pacific range, the Haas Brothers' rum named for the 1915 Panama-Pacific International Exposition in San Francisco, the fair that marked the opening of the Panama Canal; the family has been in the California spirits business since 1851. The rum is distilled at Ingenio San Carlos in Panama from sugarcane molasses on a historic Coffey copper column still, run at slightly lower proof than usual for a richer spirit. Its first three years are spent in used American oak bourbon casks, and the next twenty in used Tennessee and Canadian rye whiskey casks that have been toasted rather than charred, which caramelizes the wood sugars and lets the oak integrate without overpowering the rum's cane and molasses character. The youngest rum in the blend is 23 years old, and it is bottled at 42.3% ABV (84.6 proof). Notes start with vanilla, molasses and caramel along with pineapple and oak; the palate is buttery, with bittersweet green apple, pineapple, dried wood and salt-water taffy, and the finish is smoky yet balanced. Two decades in wood makes this one for the snifter, best neat after dinner.
