Panamá-Pacific 3 Year Old Blanco Rum
Panamá-Pacific is the rum range from the Haas Brothers, a family in the California spirits business since 1851, named for the 1915 Panama-Pacific International Exposition in San Francisco, the world's fair that celebrated the opening of the Panama Canal and the city's rebuilding after the 1906 earthquake. The rum itself is made at Ingenio San Carlos in Panama: a Spanish-style rum fermented from sugarcane molasses and distilled on a historic Coffey copper column still that is run at slightly lower proof than the industry norm, which leaves more of the cane's character in the spirit. The Blanco is the base of the range, aged three years in ex-bourbon barrels and then filtered to strip out the color while keeping the flavor the wood built, bottled at 40% ABV. The producer describes bright, tropical notes of floral jasmine and ripe banana over vegetal sugarcane and vanilla, with a light touch of almond and pistachio. Panamá-Pacific recommends it for Daiquiris, and it is just as at home in a Mojito or a highball.
