Panamá-Pacific comes from the Haas Brothers, a California spirits family in business since 1851, and takes its name from the 1915 Panama-Pacific International Exposition in San Francisco, held to mark the opening of the Panama Canal. The rum is distilled at Ingenio San Carlos in Panama from sugarcane molasses on a historic Coffey copper column still, deliberately run at slightly lower proof than standard so the spirit keeps a richer character. The range ages in two stages, and the 5 Year shows how it works: three years in ex-bourbon casks, then a two-year finish in roasted, not charred, Canadian and Tennessee rye whiskey barrels, which lets vanilla, caramel and butterscotch come through gently without masking the cane. It is bottled at 42.9% ABV (85.7 proof). The producer's notes call for caramelized bananas, honey and vanilla meeting fresh green apple and the syrup from tinned pears, with oak spice and a lingering finish. Panamá-Pacific pitches it as a sipper, and it also works long with pressed apple juice and a squeeze of lime.
