Baardseth VSOP Vieille Réserve Limited Release Cognac is a Fine Champagne cognac, blended from the two top crus of the region, Grande Champagne and Petite Champagne. The eaux-de-vie are aged four to six years in French oak with a significant share of new barrels, up to a quarter, toasted light to medium to preserve the delicacy of the Champagne-cru spirit.
It shows a medium amber color with copper and gold glints. The nose is crystallized fruit, dried apricot, orange peel and prune, followed by a mature grape note and light toasted oak. The palate is generous and dry, with candied fruit, vanilla and pastry, a light persistent smokiness, real minerality and a touch of rancio, and the finish is very long. It sips beautifully neat and elevates a Sidecar or a Sazerac.
