Three decades in oak transform the Fins Bois fruit into something deep and layered: dried fig, prune and candied orange, walnut and leather, old polished wood, beeswax and a pronounced nutty rancio, on a rich, oily palate with a finish that lasts for minutes. The strength has mellowed with age and it drinks beautifully neat, though a drop of water opens it further.
