Jean Fillioux Très Vieux Grande Champagne Cognac is the older sibling of the estate's Cep d'Or, from Domaine La Pouyade in Juillac-le-Coq, where the Fillioux family has made its own Grande Champagne cognac since 1880. Très Vieux, very old, is a blend of eaux-de-vie aged roughly twenty-five years or more in Limousin oak, bottled at 40% ABV (80 proof) with no coloring or sweetening.
The extra years deepen everything: dried fig and prune, candied citrus, honey and beeswax, cigar box, nutmeg and a pronounced, elegant rancio, all on a velvety palate with a finish that lasts for minutes. It is a cognac to pour neat in a tulip glass and let breathe.
