Jean Fillioux is a fifth-generation bouilleur de cru at La Pouyade in Juillac-le-Coq, an estate the family bought in 1894 after Honoré Fillioux began growing wine in 1880; the Fillioux name is so respected in Cognac that Hennessy employed family members as cellar masters for generations. Christophe Fillioux has run the house with Monique since 2003, farming 22 hectares entirely within Grande Champagne, planted almost wholly to Ugni Blanc with a small plot of Folignan. Distillation is on the lees with an early heart cut to concentrate flavor, and the new spirit is reduced from 70% to 65% ABV before aging exclusively in lightly charred Limousin oak, with the finest lots spending their whole life in new casks. La Pouyade, named for the estate itself, is a Vieille Grande Champagne aged roughly seven to eight years, bottled at 42% ABV (84 proof) in a 750ml bottle. The Bartender Spirits Awards, where it was recognized in 2021, describe a nose of honey, leather and spice, a palate where the honey builds alongside roasted pear and caramel, and a long cinnamon finish. It is Fillioux's best-value sipping cognac and a textbook example of Grande Champagne elegance.
