Garrison Brothers Cowboy Bourbon 2021 Release is the most coveted whiskey from Garrison Brothers Distillery in Hye, Texas, the first legal bourbon distillery in the state, founded by Dan Garrison in 2010. Cowboy Bourbon is not a batch so much as a selection: Dan and Donnis Garrison set aside their favorite barrels for a couple of extra years of maturation in the Texas heat, then bottle them uncut and unfiltered at cask strength. The 2021 release came out at 131.3 proof in a run of 5,440 bottles, each in a solid wood gift box lined with satin with a weighted medallion around the neck.
Cowboy Bourbon was named American Whiskey of the Year in Jim Murray's Whisky Bible in 2014 and 2017, and Garrison Brothers calls it the ultimate ambrosia. Official notes for the 2021 edition describe sweet pipe tobacco, full-grain leather and fresh-baked banana nut bread on the nose, wildflower honey and sparkling plum soda on the palate, and a finish of warm raspberry chocolate pie drizzled with whipped ganache. At the distillery release, a thousand bottles sold out in under two hours. A trophy for any bourbon collection.
