Crystal Head Agave Onyx Vodka

Onyx is the first commercially made vodka distilled from blue agave — and, per Maxim, the first vodka to taste of agave. Dan Aykroyd founded Crystal Head with artist John Alexander in 2008 on a purity pitch — nothing added, ever — and Onyx, launched in 2022, took advantage of a change in the legal definition of vodka that no longer requires it to be odorless and tasteless. It's made from Blue Weber agave harvested from a single estate in Jalisco, Mexico, distilled the way tequila begins, then refined into a vodka — not tequila — and bottled at 40% ABV in a glossy black skull. Aykroyd's own description: very earthy, with citrus, green grass, a little spice, a little pepper, and a fire on the finish if you drink it warm. Drinkhacker found a nose that doesn't scream agave but comes across earthy, with graphite, a hint of anise, and creosote — a new one entirely. Maxim called it weird and good, and found their bottle nearly empty after a few days of cocktails; bartenders, Aykroyd says, are loving it. Expect an unmistakable vegetal, peppery, faintly sweet agave character on a clean vodka frame — cooked agave without the oak or the smoke. Honest note: it's a hybrid, and drinkers who want a neutral vodka should reach for the Original.
