Granicera means "water witch" — the women healers who kept central Mexico's botanical knowledge for generations — and Taller Astrafilia in Mexico City named its gin line in their honor. The base is grain alcohol distilled from endemic corn varieties grown in the highlands of Chiapas, not the neutral wheat spirit most gin starts from. Juniper and more than twenty regional plants join it, sourced from farming villages around Mexico City like Atlixco in Puebla — allspice, avocado leaf, cacao, damiana, lemon verbena, Mexican agastache, hoja santa, Mexican tarragon, and pápalo among the regional botanicals, with cardamom, chamomile, coriander, licorice, and nutmeg among the classics — all hand-processed and shade-dried to preserve their aromatic and medicinal properties. Perfil Especiado is the spiced profile, bottled at 45% ABV, and it turns the volume up on the warm end of that list: expect cinnamon, black pepper, and allspice on the nose with cacao and a citrus lift behind, opening into a palate where the spices lead — cinnamon's warmth, pepper's gentle heat, nutmeg and cardamom's depth — over the corn base's soft sweetness and the herbal Mexican botanicals, finishing long and warming.
