Bimini is a modern American gin made in a 150-year-old textile mill on the Saco River in Biddeford, Maine, five miles from the coast — and it was built to taste good on a warm sunny day, period. Founders Kristina Hansen and Darren Case, both Maine natives, came home from Brooklyn in 2014 to start Round Turn Distilling, drawn by Biddeford's community of artists and makers, and named the gin for Hemingway's Islands in the Stream, where the main character sips gin with lime, green coconut water, and Angostura on a boat off Bimini. The recipe is deliberately simple: juniper, grapefruit peel, Mt. Hood hops, aromatic barley malt, coriander, chamomile, and orris root, each group milled, macerated two to four days, and distilled separately on a steam-powered steel-and-copper still built in Maine, over a four-times-distilled non-GMO corn base, bottled at 47% ABV (94 proof). The Gin Is In found hops and honey-kissed grapefruit zest jumping from the glass — bright and vibrant, lighter on juniper than tradition, suggesting centuries of American brewing more than the Caribbean. Expect white grapefruit and floral hop aromatics, a softer juniper, and a clean, citrusy finish that lingers after the glass is empty. Honest note: it's a soft, modern gin, not a juniper bomb.
