Barrel Reserve No. 1 is Bimini's answer to Old Tom — and it was built around a deliberate choice not to use new oak. Round Turn Distilling, founded in 2015 by Kristina Hansen and Darren Case in a 150-year-old textile mill in Biddeford, Maine, rested its flagship gin in used barrels specifically to avoid the heavy oak and char that new wood would impose, so the familiar botanical notes are enhanced rather than overshadowed. The base is Bimini Gin: juniper, grapefruit peel, Mt. Hood hops, aromatic barley malt, coriander, chamomile, and orris root, each group macerated and distilled separately over a four-times-distilled non-GMO corn base. The barrel time changes the shape without changing the character. Expect the citrusy notes of hops and grapefruit intensified, with hints of salinity, juniper up front mingling with tree fruit through the middle, then subsiding into a lingering caramel and vanilla finish that reads more like a light Old Tom than a whiskey-in-disguise aged gin.
