Calwise Big Sur Gin

Big Sur Gin is a hike in a bottle. Aaron Bergh spent years hiking California's Central Coast and wanted to capture the aromas he found in the wild — so when he founded Calwise Spirits in Paso Robles, becoming at 25 one of the youngest master distillers in the world, he built his flagship gin around native coastal plants. The base is distilled from Paso Robles wine grapes, a nod to the region's viticulture that gives the gin a smooth, silky mouthfeel no grain spirit can match. To it he adds twelve botanicals: traditional juniper, coriander, and lemon peel, softened with lavender and chamomile, and then the Big Sur hillsides themselves — white sage, yerba santa, bay laurel, fennel, and elderberry. Bottled at 40% ABV. Imbibe's California gin taste test found it herbaceous and subtly floral with a slightly cooling, mentholated character from the sage and yerba santa. Drinkhacker found a lightly earthy, slightly exotic nose of ginger and cinnamon with a savory undernote, then a greener, more herbal palate that isn't particularly focused on juniper. Expect coastal sage, bay, and elderberry over soft citrus and gentle juniper, with the grape base keeping everything round and mellow, finishing cool and clean. Honest note: contemporary and herb-forward, not a London Dry. Calwise says it pairs with campfires and skinny dipping in hot springs; a G&T with a sage leaf or a Martini with a lemon twist works too.
