Christian Drouin holds the world's largest selection of single-vintage Calvados and has collected more than 200 gold medals for it — and Le Gin is what happens when that family points its expertise at juniper. It's the only gin made by distilling cider: the base spirit comes from more than thirty varieties of Normandy cider apples, fermented and run through the house's three small copper pot stills in the Pays d'Auge, the same way the Calvados begins. Guillaume Drouin then spent months distilling botanicals one at a time in search of flavors that would balance juniper and cider apple, and settled on eight — all but juniper drawn from the aromatic world of a great Calvados: rose and lemon for delicacy, ginger, vanilla, cinnamon, and almond for a smooth, spicy body, and cardamom for roundness and fruit. Each is distilled separately and blended in proportions unique to every batch of 2,850 bottles, bottled at 42% ABV. It took Gold at the 2019 World Gin Awards and the 2018 San Francisco World Spirits Competition, and Best in Category at the ADI Craft Spirits judging. Master of Malt found it crisp and bright with floral lavender and citrus, a touch of caramel, chewy juniper, fresh cherry, and cinnamon. Honest note: Falstaff found the apple so forward it lacked gin typicity — which is either the flaw or the whole point.
