First released in January 2010 from the Nashville operation that was the city's first legal craft distillery since Prohibition, Barrel Aged Gin starts with Corsair's vapor-basket-distilled gin recipe with the juniper content turned up, then rests it for around six months in charred American oak barrels that previously held the distillery's own spiced rum — a choice The Gin Is In called rather unique among aged gins. Difford's found a hazy golden amber pour with orange zest, pine sap, spruce forest, coriander, and clove on the nose alongside vanilla, leather, and nutmeg, then a palate of spicy mince pies and mulled wine — traditional juniper gin laced with clove, lavender, vanilla, leathery oak, and cracked black pepper — finishing on clove, pepper, and lingering sultanas: Christmasy, and very Corsair. The Gin Is In found juniper hitting up front and in the finish with a lemon-orange acidic tenor, spicy tang, and an underlying nutty note like spiced candied walnuts coming from the wood.
