Herzog Wine Cellars traces its roots to the Herzog family's nineteenth-century winery in Czechoslovakia; after emigrating to New York in 1948 they founded Royal Wine Corp, and in 1985 opened Herzog Wine Cellars in California, now based in Oxnard under winemaker Joe Hurliman. The Variations series is Herzog's Battle of the Barrels, bottling the same North Coast Cabernet Sauvignon under different oak regimes so drinkers can taste exactly what the barrel contributes. This American Oak edition is grown on well-drained red volcanic soils of the North Coast and aged nine months in 100% new American white oak barrels coopered from 80- to 100-year-old trees, which release bold, sweet aromatics and a creamy texture; it is bottled at about 14.5% ABV and is certified kosher. The winemaker describes fresh black plum fruit, a rich, creamy mid-palate and a finish of butterscotch and toasted pecan. Pour it with brisket, grilled short ribs or a Shabbat roast, or taste it alongside the French Oak sibling for the full experiment. Vintages may vary; we ship the current release. 750ml bottle.
