Herzog Variations Four California Cabernet Sauvignon
Herzog Wine Cellars descends from a winemaking family that supplied the Austro-Hungarian imperial court in the 19th century; after fleeing Europe, the Herzogs rebuilt in New York in 1948 and established their flagship kosher winery in California, now headquartered in Oxnard in Ventura County. The Variations series lets the Herzog winemaking team play with blending across regions, and Variations Four is a Cabernet Sauvignon assembled from four of California's top Cabernet appellations: Paso Robles, Napa Valley, Alexander Valley and Santa Ynez. Each region contributes a different voice, from the ripe, generous fruit of Paso Robles to the structure of Napa and the savory lift of the cooler Santa Ynez Valley. The wine is aged in oak and bottled at around 14.5% ABV, and it is fully kosher. Tasting notes show concentrated plum, red cherry aromas, hints of red currant and a toasted coconut finish, with soft tannins that make it easy to enjoy young while holding five to eight years in a cool cellar. This 750ml bottle is built for burgers, brisket, grilled lamb chops or Shabbat dinner. Vintages may vary; we ship the current release.
