Exodus is a blended Jamaican rum from Proof and Wood, the independent bottler that blends and ages its spirits in Bardstown, Kentucky, and the name fits: its rums travel through three countries before they reach the bottle. The blend has three components. The first is a Jamaican column-still rum aged three years in Canada in ex-Canadian whisky barrels. The other two come from Worthy Park Estate in St. Catherine Parish, one of Jamaica's most respected pot-still distilleries: a light-bodied and a heavy-bodied pot-still rum, each aged two to three years in Jamaica. Proof and Wood brings the three together in Kentucky and gives the blend a further two years in ex-American rye whiskey barrels before bottling at 42% ABV (84 proof). The producer describes caramel, banana and vanilla from the oak, set against the funky grip of the Worthy Park pot-still marques, with delicate tobacco leaf, black tea and ripe peaches. That mix of whiskey-barrel sweetness and Jamaican funk makes it a natural bridge for bourbon and rye drinkers curious about rum, and it has enough backbone for a Daiquiri, a Rum Old Fashioned or a Mai Tai while staying easy to sip over ice.
