Cazcanes Joven Tequila

Cazcanes is a small additive-free brand founded in 2015 and made at NOM 1614 in Amatitán, in the Tequila Valley lowlands of Jalisco, using 100% certified organic blue Weber agave and spring water from the Navichi Springs. The numbering on Cazcanes bottles tracks strength: No. 7 is 80 proof, No. 9 is 100 proof, No. 10 is still strength. This is the No. 9 Joven, a 100 proof (50% ABV) tequila blended from the No. 9 Blanco, the No. 9 Añejo and the No. 9 Extra Añejo, so unlike the gold-tinted jovens of the big brands, this is a true blend of unaged and long-aged tequila from the same house with no coloring or sweetener. The base is made the Cazcanes way: mature agave cooked slowly in an autoclave over 24 hours, roller-milled, fermented open-air in stainless steel with proprietary yeast, and double distilled in stainless pots with copper coils. The producer's notes for the Joven run to wood, truffle and lavender with lightly smoked pineapple on the nose, then a peppery, warm palate of cinnamon, vanilla and agave.
