Don Alberto Joven comes from Tequilera Puerta de Hierro, NOM 1477, in the Los Valles region of Jalisco, the same distillery behind the Gran Reserva de Don Alberto blanco and extra añejo. It is made from 100% blue Weber agave cooked in stone and brick ovens rather than a diffuser, crushed on a roller mill to separate the sweet juice from the fiber, fermented in stainless steel tanks, and double distilled in stainless steel pot stills. Joven is the tequila category for blanco blended with a portion of rested or aged tequila, a style meant to soften the edges of a young spirit while leaving the agave in front. Tasters on Tequila Matchmaker pick up smoke as the leading note, with vanilla and fruit sweetness on the nose, a peppery, spicy palate rather than a sweet one, and a short finish with a hint of candied almond.
