Lazzaroni Maraschino Liqueur
Lazzaroni is the Saronno house best known for amaretto, and its archives hold maraschino recipes and labels dating back to 1860. The liqueur is made by infusing marasca cherries, the small, sour cherry variety behind every true maraschino, together with their crushed pits, which give it a slightly bitter almond note alongside the fruit. The result is crystal clear and relatively dry for a liqueur, bottled in the US at 24% ABV (48 proof). Laird & Company, the US importer, describes a fragrant, floral nose of candied cherry and warm spice, then an elegant cherry palate with secondary notes of bubblegum, jasmine, orange blossom honey and almond, and a bright, lightly sweet finish that balances almond and cherry. Maraschino is one of the essential bar liqueurs, used in small doses where its funky, floral cherry character ties a drink together: it's the key ingredient in the Aviation, the Last Word, the Hemingway Daiquiri, the Martinez and the Brooklyn. Outside the bar it works poured over fresh fruit or desserts, or as a flavoring in baking. A bottle lasts a long time, since most recipes call for a quarter to half an ounce.
