Mala Idea Tobalá Mezcal
Mala Idea Tobalá is a 750ml bottling of wild Tobalá (Agave potatorum), a small, slow-growing agave prized for its aromatic, fruity and floral character. Mala Idea was founded by Marcos Mendoza and is made in small micro-batches by mezcalero Celestino Sernas in Santiago Matatlán, Oaxaca. Piñas are roasted in an earthen oven, crushed with a 1.5-ton tahona wheel, fermented in the open air with ambient wild yeasts, and distilled in vintage copper stills, with some bottlings distilled a third time. The agave is a mix of semi-cultivated and wild plants, and the whole process is artesanal, done by hand in the traditional Oaxacan way with no industrial shortcuts. The brand focuses on single-agave and ensamble expressions that let each plant speak for itself. Tobalá typically shows ripe fruit, flowers and a soft sweetness over a clean agave core, so it is best enjoyed neat in a copita at room temperature to show off the wild agave.
