Cañada is an Oaxacan cane spirit made by third-generation aguardiente distillers in the remote town of Santa María Tlalixtac, high in the cloud forest of northern Oaxaca, Mexico. The family cultivates, harvests, and distills 100% organic Java sugarcane grown at altitudes of up to 4,000 feet, and bottles the result at a full 55.28% ABV in a generous 1-liter bottle.
Made from fresh cane rather than molasses, it is bright, grassy, and expressive like a rhum agricole, with the mineral, floral, and slightly funky character of Oaxaca's mountain aguardiente tradition and a long, warming finish.
