The San Andrés Ensamble is Alipús at its most refined — a special edition from the same palenque as the beloved pink-label San Andrés, blending cultivated espadín with two wild Agave karwinskii, madrecuishe and bicuishe. Alipús is the single-village project Los Danzantes launched in 1999 to bottle individual family palenques and put the maker's name on the label; this one comes from Don Valente Ángel and his sons in Santa María La Pila: agaves pit-roasted in a conical earthen horno, crushed by tahona, fermented in wood, and double-distilled in copper, bottled at around 47% ABV; lots vary, so check yours. Mezcal Reviews found a very floral nose of honey, smoke, and a whiff of dust, then a delicate palate of candied tangerine, macadamia nuttiness, custard, and key lime — well-structured, well-rounded, and, compared to the regular ensamble, richer in mouthfeel with no bite. Mezcalistas described florals, honey, grapefruit and tangerine citrus, smoke, and vanilla. Expect the espadín's sweetness and body threaded with the karwinskii pair's herbal, mineral, faintly bitter-green character, finishing long and elegant. Honest note: this is a sipper for drinkers who already know espadín and want to taste what the wild cuishe family brings — and a genuine step up from the standard San Andrés in price and complexity.
