Catedral de Mi Padre, "my father's cathedral," was founded in 2022 by father-daughter duo Jeff and Sydney Block after eight years living in Oaxaca, partnering with six master mezcaleros, one per bottle; this one is made by Maestro Mezcalero Joel, who has lived in the mountains near Santiago Matatlán his whole life, at 5,500 feet where agaves grow abundantly, in a palenque that's kosher certified. Several generations of mezcaleros in his family, artisanal practices throughout: earthen-pit roast, natural fermentation, double distillation in small copper pots, bottled at 96 proof (48% ABV).
