Tierra Blanca is named for the white earth — the pale, mineral soil of the Jiménez family's fields in Santiago Matatlán — and it's Fidencio's terroir bottling. Fidencio Jiménez began making mezcal over a century ago after moving to Santiago Matatlán, the world capital of mezcal, and the palenque is now run by his great-grandson, fourth-generation maestro Enrique Jiménez, from estate-grown agave; the family also makes El Buho. Tierra Blanca is espadín from a specific parcel of that white, limestone-rich ground, roasted in an earthen pit, crushed by tahona, fermented with native yeast in pine vats, and double-distilled in a wood-fired copper alembic, bottled at still strength; check your label for ABV and lot. Where the Clásico is the house blend across the estate, Tierra Blanca is one soil's espadín: expect the family's vanilla, honey, and earth with a sharper mineral edge — chalk, wet stone, citrus peel, and a clean, saline note — over a gentle smoke, opening into a bright, dry, focused palate with green pepper and a long, mineral finish.
