Bapt & Clem's is the rum project of Marc Darroze, who spent twenty years bottling some of the finest Bas-Armagnacs in Gascony under the family name before applying the same selector's eye to spirits from around the world. This 8 Year comes from Alcoholes Finos Dominicanos in the Dominican Republic, a distillery dedicated to rum from local sugarcane and to environmental stewardship, and it's built on an idea almost nobody had tried: rum finished in Armagnac casks. The rum spent its first seven-plus years in ex-bourbon barrels in the Caribbean, then traveled to Gascony for a final ten months in massive 2,000-liter casks that had held Armagnac for thirty years.
