Bulleit '87 is the brand's first new permanent expression since Bulleit 95 Rye launched in 2011, and the first time Bulleit has blended its two signature whiskeys into one bottle. The name marks 1987, the year Tom Bulleit founded the modern brand — not an age statement. The construction is more deliberate than most blends: the bourbon is distilled and aged at Bulleit's own Shelbyville, Kentucky distillery, while the rye is distilled and aged in Indiana before traveling to Kentucky. Both components age a minimum of four years, then get finished separately in their original barrels with toasted American oak and French oak staves for four to six weeks — a technique new for Bulleit — before finally being married and bottled in Shelbyville at 90 proof (45% ABV). Whiskey R&D manager Phil Gelineau describes it as a cake: the bourbon is the sponge, the rye is the chocolate shavings, and the toasted staves are the buttercream that brings it together. Expect caramel, brown sugar, baking spice, and toasted oak on the nose, opening into a layered palate of vanilla, sweet grain, toasted wood, and mellow rye spice, finishing gently with sweet-and-spicy warmth. It debuted at Tales of the Cocktail, wears the brand's first-ever blue label, and is explicitly built to sip — neat or over ice — though it has the backbone for a Manhattan or Old Fashioned.
