Dark Arts Whiskey House Oloroso Sherry Cask Vol. 3 is the third batch of the Lexington, Kentucky blending house's sherry-finished bourbon, the follow-up to the 7.5 year batch nicknamed Sherry Garcia, and this time the whiskey is a year older. Dark Arts was founded by Macaulay Minton, who cut his teeth running single-barrel selections at Wilderness Trail, and it sources mature straight bourbon from distilleries in Indiana and Kentucky, then finishes it in uncommon casks and staves and bottles it at full strength with no chill filtration. Vol. 3 is an 8.5-year-old straight bourbon whiskey finished in an Oloroso sherry wine cask, Oloroso being the rich, dry, oxidatively aged style of sherry whose casks are a classic finishing wood in Scotch and a rarity in bourbon, and it comes out of the cask at 114.06 proof, 57% ABV, in the house's 750ml decanter-style bottle with the alchemist label. Expect what the sherry cask does to a well-aged high-rye bourbon: dried fig, raisin and dark cherry layered over caramel, toasted oak and baking spice, with a long, nutty, slightly savory finish that the extra year of age rounds out. Each bottle carries its batch and bottle number on the label. Pour it neat, give it time, then a few drops of water to watch the sherry open up against the rye spice.
